The estate is surrounded by hectare upon hectare of old vines planted in the sandy, stony soil that produces the purest Albarino. And their work in the winery preserves what nature and the vineyards provide. While many of their neighbors have been seduced by commercial yeasts, which can promote garish flavors that cover up the mineral and salt terroir, Fefinanes has always let fermentation occur spontaneously, without additions. But even in the winery, nature is king: Fefinanes (unlike many in Rias Baixas) has the good fortune to have a bodega full of beneficial yeasts, making commercial yeasts unnecessary.\u003c\/p\u003e\n\n\u003cp\u003eEach bottle captures the pure essence of the North Atlantic Ocean and Galicia’s lush seaside.
