Domaine Bois d'Yver

Thomas Pico is the “boy” genius of Chablis. In 2004 he inherited 2.4 hectares of vines from his family’s estate, which has historically produced correct, but uninspiring wines. Under the tutelage of Alice and Olivier de Moor, he began converting those parcel to organic viticulture. Soon he had set up his own domain, Pattes Loup, now amongst the purest and most sought after wines in Chablis. He was in his early 20s.

Thomas also farms and makes a show-stopping Chablis from his father’s historic 2.5 ha estate, Domaine Bois d’Yver, which he’s been quietly reviving since 2015. Because of hail in 2016 and 2017 yields were minuscule. Almost all of this exceptional fruit that was left was blended into Pattes Loup. Luckily for us, importer Nadia Dmytriw of Floraison Selections, convinced him to bottle a tiny amount solely for her.
