What is this wine?

Pierre-Yves Colin-Morey (PYCM), based in Chassagne-Montrachet, is one of Burgundy’s most respected white wine producers, celebrated for his precise, ageworthy, and mineral-driven style. Since founding his domaine in 2005 after years at Domaine Marc Colin, Pierre-Yves has championed low-intervention winemaking—hand-harvesting, whole-cluster pressing, native fermentations, aging on lees without bâtonnage, and minimal new oak—to preserve clarity and tension.
The Saint-Aubin 2023 comes from a blend of several hillside parcels around the village of Saint-Aubin, including sites near En Remilly and Les Combes. These high-elevation vineyards, planted on thin, chalky limestone soils, are known for producing Chardonnay with exceptional freshness and minerality.

Why get this wine?

This is textbook PYCM—tense, flinty, and pure, capturing Saint-Aubin’s cool limestone character with remarkable finesse. The 2023 vintage adds a touch of ripeness to its usual electric profile, making it both approachable young and capable of graceful aging. It offers near–Premier Cru precision at a fraction of the price, making it one of the strongest values in the domaine’s lineup.

What does this wine taste like?

Racy and refined, with lemon zest, green apple, white flowers, and crushed stone. The palate is taut and saline, combining texture with linear drive and a long, mineral finish.

When should you drink this wine?

Drink 2025–2033. Decant for 30 minutes in youth to reveal its full aromatic range. Excellent with oysters, grilled fish, or roast chicken.

Pierre-Yves Colin-Morey became a star for all kinds of reasons.

Partly, it was because he was an early master of a style of white Burgundy that has now become very popular: less oaky (thanks in part to larger barrels), no lees-stirring, earlier picked, a bit more reductive. The aim is not to make the fat wines that were still popular when he was starting out, but rather expressive wines that were chiseled and precise. His wines do all of this so well that he persuaded the rest of us to go along for the ride.

He also became a star because of critical acclaim, and it was the right kind of critical acclaim for the moment. Way back in 2008 Jancis Robinson wrote up PYCM and headlined it: “Making Chassagne more like Riesling”, capturing the style of these wines perfectly. Only Jancis could make a star of Klaus-Peter Keller by comparing his Rieslings to white Burgundy and a star of PYCM by comparing his white Burgundies to Riesling!

But we think he also became a star for a reason that some may overlook: he has long been a champion of Burgundy’s so-called lesser terroirs, and he has been able to make from them incredible wines that can reach a larger audience.
