Jean et Sebastien Dauvissat Chablis 1er Cru Vaillons 2016

The 2016 Vaillons is super classic and entering a beautiful drinking window now. The gun flint and oyster shell aromatics are leaping from the glass and the combination of texture, orchard fruit, citrus and saline minerals is divine. This type of complexity and terroir transparency would easily cost 3 times as much in the other Chardonnay growing regions of Burgundy.

Professional Reviews

BH 91
"Notes of white rose petal, oyster shell, lemon rind and apricot introduce cool, pure and equally refined middle weight flavors that exude a subtle minerality on the clean, bone dry and impressively persistent finale. This citrusy effort is lovely stuff that should drink well early but reward 6 to 10 years of cellaring too." -Allen Meadow

"Pale, bright yellow. Piquant scents of lemon drop, white grapefruit and white peach. Tight and citrussy in the mouth and hiding its richness in the early going. But this rich yet energetic Vaillons boasts terrific purity of fruit and cut and a very long, rising, refined finish. This fruit was not frosted but the yield was still under 35 hectoliters per hectare, according to Dauvissat, who also told me that his degenerating old vines didn't produce a second generation of grapes in 2016." -Vinous

"The 2016 Chablis 1er Cru Vaillons hails from a parcel that's a mere 400 meters away from the domaine's holdings in Séchet, yet the wines are worlds apart. The Vaillons exhibits a muskier bouquet of orange blossom, peach and honeycomb, followed by a medium to full-bodied, pure and textural palate that's expansive and open-knit. It's more immediately charming, while the tighter-knit Séchet will need more time." -Robert Parker

What importer Rosenthal Wine Merchant has to say about this wine...

The Dauvissat holdings are slightly in excess of 4 hectares with seven-tenths of a hectare being devoted to the old vines planting. The “Vaillons” vineyard lies in the center of the large 1er Cru hillside on the southwestern side of Chablis. The vines are on a steep slope and have a south-southeast exposition. Amongst the 1er Crus at the Dauvissat domaine, the “Vaillons” is perhaps the most typical “Chablisien” with its clear reference to the Kimmeridgian subsoils … an intensely mineral wine with a persistent.
