Claude learned winemaking from his legendary parrain, to whom he apprenticed, and continues to share a philosophy with.\u003c\/p\u003e\n\n\u003cp\u003eCourtil has old vines: 70+ on average, with some vines over 100 years old. Courtil and his family work them manually; they have always farmed sustainably. The winemaking is traditional: they ferment in concrete; age in concrete, old large wood and about 10% newer wood.
