And he does so obsessively.\u003c\/p\u003e\n\u003cp\u003eJerome is blessed to own 100% of Largillier, a vineyard in the Aube that is one of the most fascinating sites in the entire region. The soil here is mostly Kimmeridgian limestone, the very same geological vein that runs through Chablis. However, instead of Chardonnay, Coessens plants Pinot Noir. This unique combination creates a fascinating tension: the clay provides broad, muscular structure and fruit density, while the limestone injects a vibrating, salty minerality that keeps the wine upright and energetic. It is a terroir that demands attention, producing wines that feel more like a grand cru Burgundy with bubbles than a traditional aperitif Champagne. \u003c\/p\u003e\n\u003cp\u003eSome of the grapes he grows here are sold to Guillaume Selosse, who produces a Champagne from them that is hard to acquire for less than $600.
