Claude put the estate on the map in 1970 when he decided to stop fighting with the grape buyers at the Maison's and bottle the wine himself. \u003c\/p\u003e\n\n\u003cp\u003eThe Grand Cru of Avize is where they live and most of their vineyards dig deep into the pure chalk soils. Agnes has cut out all herbicides and pesticides but has so far taken a pragmatic approach to farming, avoiding a full conversion to organics. \u003c\/p\u003e\n\n\u003cp\u003eIn the cellar malolactic fermentation is blocked to ensure as much acid and tension as possible. Cuvée's are held back until they are ready to drink meaning most 10-20 years for the top vintage wines.
