While the rest of Beaujolais was spraying, sulfuring, yeasting and chapitalzing, he did things differently, harvesting fully ripe grapes, fermenting whole clusters with indigenous yeasts (without sulphur) and aging in large foudre.\u003c\/p\u003e\n\n\u003cp\u003eJoseph passed away in 1990, leaving his 4 hectare domaine in Corcellette to his daughter Genevieve and her husband, Jean-Claude Chanudet.
