Marc Ollivier at Domaine de la Pepiere even says, \"this is where I go when I have questions about sustainable farming.\"\u003c\/p\u003e\n\n\u003cp\u003eStephane does everything the way his grandfather did, because he thinks it makes the best wine (hand harvest, spontaneous fermentation, no chaptalization, no acidification).
