In 2013, the city of Dijon purchased a 160 hectare property called Domaine de la Cras. It is just above Marsannay and Chenove. The previous owner had built a winemaking facility and planted 5 hectares of red and 3 hectares of white.\u003c\/p\u003e\n\n\u003cp\u003eDijon started a search for someone to run the estate. The vineyard had to be farmed organically and the person had to be young and own no vineyards of their own. Working at Domaine Bizot in Vosne-Romanee they found Marc Soyard who was hired to be manager and winemaker at Domaine de la Cras. The rent paid for the estate was set at 2000 bottles of wines per year and Marc is allowed to produce his own wine from other vineyards on the property.\u003c\/p\u003e\n\n\u003cp\u003eThis is the only estate that produces Coteaux de Dijon - a brand new appellation! The vines are farmed organically. Some biodynamic principles are followed. 100% natural yeasts for fermentation, 100% whole cluster for the reds and elevage is done in a mixture of old and new oak barrels. \u003c\/p\u003e\n\n\u003cp\u003eThe label features an owl - the symbol of Dijon. There is a small stone owl carved into a corner of the Cathedral of the Notre Dame de Dijon.
