Whether you are a voile lover, a voile novice, or are merely voile-curious, there is something for you here, and that's not a statement that we can often make about these peculiar, particular wines that seem more often to choose their proponents more than the other way around.\u003c\/p\u003e\n\n\u003cp\u003eHow Fabrice achieves this perfect balance is, as far as we're concerned, magic. Magic and experience: he had worked for the estate's previous proprietor for over twenty years when he took over in 2011. By that time he had been working organically for nine years, and begun introducing biodynamic methods in 2008. But he does not self-identify as a natural winemaker. Instead, he prefers to focus on his place—the limestone- and marl-rich hills of Arbois. Dodane is a native-yeast, low-sulfur purist, and this Chardonnay is raised in large 500- to 600-liter barrels, so the oak frames the wine rather than flavors it.
