They manage their vineyards with a caring and organic philosophy, keeping yields low and nurturing their rather old vines—on average around 50 years, with some parcels as old as 100. Which is undoubtedly the reason why they seem to be able to reveal Cairanne's true pedigree.\u003c\/p\u003e\n\n\u003cp\u003eKeeping with very traditional principles in order to let the terroir sing, all the fruit is hand harvested, destemmed, and allowed to ferment in the neutral, traditional cement tanks and a little stainless steel. The wine rests in very old, neutral oak, and then is bottled without filtration. A simple—and perfect—recipe for pure, real wines of character and place.
