He and his partner Mercè García prefer to stay close to the land, completely consumed by the small, artistic sanctuary they’ve built around their family home, Cal Raspallet, in the Alt-Penedès.\u003c\/p\u003e\n\u003cp\u003eLong before he ever handled a cellar press, Soler approached wine from the other side of the bottle, winning the prestigious title of Spain's Best Sommelier in 1997. But everything changed when he inherited a microscopic, historic parcel of vines planted by his grandfather in 1945 called Vinya dels Taus. At the time, the native Xarel·lo grape was treated as a workhorse variety destined almost exclusively for sparkling Cava. Enric had a completely different, wildly ambitious vision. He became obsessed with its potential, believing its natural acidity, thick skins, and firm structure could yield still, unfortified white wines capable of standing shoulder-to-shoulder with the finest white Burgundies of the world.\u003c\/p\u003e\n\u003cp\u003eTo escape growing industrialization on the Penedès plain, Enric made a radical move into the mountains, planting the steep Espenyalluchs vineyard at a dizzying 400 meters of elevation. By using a massale selection of cuttings from his grandfather's original, ancient vines, he captured an electric, mineral-driven side of Xarel·lo never seen before. He treats the landscape with immense respect, and when an old vine succumbs to time, he replaces it only with cuttings from that exact same plot as an intentional exercise of memory to keep the vineyard’s identity intact. In the vineyard, Enric works strictly by ecological and biodynamic precepts. Because of recent intense climate shifts and severe droughts, his farming is incredibly selective; he manually drops any grape bunches that lack depth and keeps the fruit shaded from the blinding sun to preserve a screaming, vibrant freshness that we just can't get enough of.\u003c\/p\u003e\n\u003cp\u003eIn the cellar he keeps it monastically simple. The grapes are harvested by hand in small 15 kilo crates, pressed in a tiny 1,000 kilo press to isolate only the finest juice, and fermented naturally using wild yeasts with absolutely no adjustments made to the musts. He stopped using bâtonnage entirely to keep the wines tightly wound and chiseled, letting them stabilize naturally over nine months in a pristine mix of Austrian Stockinger foudres, seasoned Burgundy barrels, and Nomblot concrete eggs.
