The old vine of Nebbiolo, Dolcetto, Barbera and Grignolino cover as patches of earth that would comfortably fit on the field of any Major League baseball stadium. He makes so little wine that are all are hand numbered and if you try to do some online research you will come upon scant amounts of information.\u003c\/p\u003e\n\n\u003cp\u003eIt’s quickly evident that you are not in Kansas anymore when you first set eyes on his bottles. Some have hand pressed pulp labels, some look like they were forged from magma deep inside the earth or unearthed from an ancient tomb.\u003c\/p\u003e\n\n\u003cp\u003eThings get even stranger in the cellar. Fabio uses a mix of older large barrels (500L), glass, and steel. And he has been experimenting more and more with what he refers to as his toilets; porcelain amphora that he has designed and created himself. His Barbaresco barrels are not toasted like an other barrels. Instead, Fabio vaporizes the wood oils and sugars by applying dangerously hot volcanic stones to the interior. Imagine a sauna for barrels located deep in the hottest corner of hell.\u003c\/p\u003e\n\n\u003cp\u003eBut what's in the bottle is even more interesting. These wines are gorgeous, natural wines that are clean, wild and deftly display the muscularity and finesse that the region is famous for. All show an extreme sense of place, achieved through biodynamic farming and painstaking work by hand. \u003c\/p\u003e\n\n\u003cp\u003eFabio is more than comfortable with the way he does things: unabashed by what's popular amongst his contemporaries or what consumers think should be coming out of Barbaresco.
