Fernando Mora is a Master of Wine who set up shop in Valdejalón, a rugged, historically overlooked corner of Aragón, Spain. He has zero interest in making fruit bombs. Instead, he looks at high-altitude Garnacha and sees the potential for Pinot Noir-like grace. Working with ancient, dry-farmed vines planted in harsh limestone and slate soils, he utilizes whole-cluster fermentations and incredibly gentle extraction, completely avoiding new oak.
