Since 1885, five generations of Grongnets have tended the vines in the village of Étoges, roughly 15 miles southwest of Épernay in the Vallée de la Marne. Farming is organic, and malolactic is always blocked, to retain a nervy acidity. The Carpe Diem is an oxidative style, aged fully under cork, a method not often seen anymore.
