{"title":"Guillaume Michaut","description":"\u003cp\u003eGuillaume Michaut has spent almost his entire life in and around the vineyards of Chablis. His Grandfather helped extend the AOC to their home village of Beines, and was able to pass along a sizable chunk of prime vineyards to his children. Guillaume worked alongside his father and uncles for many years, but after his father passed unexpectedly he decided he wanted to take his inheritance in a different direction than that of his uncles. \u003c\/p\u003e\n\n\u003cp\u003eInspired by a year of interning with Nicolas Maillet in the Macon, Guillaume decided he wanted to convert his vines to organic viticulture and begin using a much lighter hand in the cellar as well. Though the family holdings are substantial, his own parcels amount to about 1 hectare in total. \u003c\/p\u003e\n\n\u003cp\u003eThis small size has actually allowed him to experiment with different approaches at the same time: hand harvesting versus machine, stainless steel versus oak, sulphur use and fining\/filtration are all evolving as he seeks to understand the best way to express the terroir. Though only a few years into his journey, Guillaume has already discovered that the land, the vineyards and the fruit are more important than his own work in the cellar. Hence the name Domaine 47 N 3 E, which denotes the latitude and longitude of his parcels. \u003c\/p\u003e\n\n\u003cp\u003eMichaut’s vines are located in a parcel of AC Chablis that he helped replant in 2000, and in the 1er Cru of Beauroy and specifically the parcel known as the Cote de Savant. From these vines he makes 3 cuvées, a classic villages Chablis, and 2 different iterations of the Cote de Savant. They are both classic Chablisienne and yet also a bit more textured and powerful than many neighbors. The work of Patrick Piuze comes immediately to mind, and though he’s likely years from hitting peak stride you can imagine that the brilliance of Raveneau might be a guiding light.\u003c\/p\u003e","products":[],"url":"https:\/\/sf.flatiron-wines.com\/collections\/guillaume-michaut.oembed","provider":"Flatiron SF","version":"1.0","type":"link"}
