His Burgundian grandfather had willed just under three hectares of Volnay vines to Thiébault's mother, and while she didn't sell off the land, she didn't farm it, either. \u003c\/p\u003e\n\n\u003cp\u003eSo Thiébault moved to Volnay, was educated at the Lycée Viticole in Beaune and established his domaine, with the help of a cousin, Pommard's Jean-Marc Bouley. Almost immediately, he began to convert the vines to organic, and in 2005 received a biodynamic certification.
