{"title":"L\u0026C Poitout","description":"\u003cp\u003eLouis and Catherine (L\u0026amp;C) Poitout are part of the same phenomenon that you are seeing further south in Burgundy or on the other side of Paris in the Loire Valley: a younger generation taking over the vines and re-imagining what to do with them.\u003c\/p\u003e\n\n\u003cp\u003eUsually—and certainly in the case of the Poitouts—this means following local tradition, but with greater focus on artisanship and without chemicals (Chablis is one corner of Burgundy where they remain far too common). While almost everyone in Chablis continues to harvest by machine, the Poitouts use their hands. More particularly, the Poitouts do not blend wines. There is no straight Chablis AC here—everything comes from a single vineyard parcel, and is bottled with an individual name.\u003c\/p\u003e\n\n\u003cp\u003eLouis and Catherine have holdings in the village of Villy in a vineyard known as Vaudat. The mother rock here is kimmeridgian limestone, as in most of Chablis, but here there is also a layer of small pebbles. What’s most interesting about Vaudat is its orientation. Chablis’s Grand Crus all face south west in order to maximize sun exposure and to benefit from the warmer afternoon sun. But Vaudat faces east. This made it really hard to ripen grapes historically, but with global warming circumstances have changed. Another degree of warming and perhaps Chablis will flip and start following the tradition of the warmer Côte d'Or, where the greatest Chardonnay is grown on vineyards that face east! For now, enjoy the extra cut and minerality of cool Vaudat.\u003c\/p\u003e\n\n\u003cp\u003eThe Poitouts have a parcel within premier cru Vaucoupin, in the village of Chichée, known as Stellaris. Vaucoupin may not be the most famous of Chablis’ premier crus, but it is certainly well regarded and loved for being extra Chablisien. The kimmeridgian limestone and loose chalk here are particularly dense, and you can feel this in the wine’s amped-up texture and extreme salinity.\u003c\/p\u003e","products":[],"url":"https:\/\/sf.flatiron-wines.com\/collections\/l-c-poitout.oembed","provider":"Flatiron SF","version":"1.0","type":"link"}
