Cinzia Canzian founded this small estate at Vittorio Veneto in 2004 and named it for her grandmother Alice, after nearly two decades working at her husband's winery and at the Prosecco consortium — she knows exactly what the category has become and makes a deliberate argument against it. The fruit comes from the Costa and Sàrmede zones, vines at 200–240 meters on lean, rocky soils of glacial moraine origin, chalky and mineral, which is where the lift and cut in this wine come from. Vinification is undramatic and careful: soft pressing, a cool ferment, 45 days on fine lees, then a second fermentation of about 45 days in steel tank. It's an extra dry, so there's a touch of sweetness on the finish by design — this is the friendly, generous end of Prosecco, but made by a grower rather than a factory. Consider it the bottle you open instead of reaching for something to dilute with orange juice.","brand":"Regal Wine Co. Cinzia Canzian started her estate at Vittorio Veneto, in the province of Treviso, in 2004. Before that she spent nearly twenty years at her husband's winery and at the Prosecco consortium, and she named the place for her grandmother Alice, whose osteria she still remembers. When the market moved toward sweeter Extra Dry, she stuck with the natural, dry style, which raises a fair question about what \"traditional\" Prosecco from the 1950s and '60s actually tasted like. Her Brut Nature wines were the first from the Prosecco area to really get sommeliers and wine lovers looking at it as an alternative to Champagne with food. That's a serious track record, but don't save Osé for a special occasion. It's the aperitivo bottle for anyone who finds most pink fizz too sugary.","brand":"Regal Wine Co. A Fondo is how Cinzia Canzian finally made enough col fondo to sell. It comes from her memories of her grandmother Alice's osteria, where wines like this were poured. The name comes from \"fino in fondo,\" going all the way to the bottom, and for her that means the soil, the native yeasts and a wine with nothing to hide. The fruit is 100% Glera from a 1.5-hectare vineyard in Carpesica at 200 meters, on lean glacial moraine full of rock and dolomite stones, weeded by hand and farmed with no herbicides or pesticides. Fermentation starts on its own, the wine finishes in bottle with must from the same vintage, and no sulphur is added. It's gently sparkling rather than fully fizzy, and beer drinkers tend to get it right away because it isn't the fruity Prosecco they're expecting. Before you open it, turn the bottle upside down to mix the sediment back in and give the wine its soft, cloudy glow.","brand":"Regal Wine Co.
