Methode Sauvage

Since 2013 Chad Hines has been crafting quietly momentous wine under his label, Methode Sauvage. Initially the idea was to give a voice to California Chenin Blanc and Cabernet Franc. Those early efforts produced wildly complex wines with layered fruit, structured and fresh. It didn't take long for the wines to began appearing on some of the country’s most exciting wine lists.

It also didn't take long for Chad’s ambition and talent to move onto other varieties. Along with the cuvées of Chenin and Cab Franc from numerous sites all over the state he started playing around with Pinot Noir, Syrah, and Chardonnay as well as the Alpine varieties like Trousseau and Poulsard. Each wine has been a study in the incredible potential of California's varied terroir. Whether it’s light, structured and intensely aromatic Pinot Noir from the cool Petaluma gap or his dark, sultry and animalistic Syrah, the wines are true to their European roots and varietal characteristics, but with a complexity and richness of fruit that those old world wines only achieve in the best vintages.

Like many of the wine we love, Chad’s wines are made in the vineyard. What we mean by that is he sources his fruit from passionately farmed sites that employ either organic or biodynamic practices and that the work in the cellar is intuitive and relatively hands-off. Having spent time in the cellars of La Crema and Wind Gap, at a young age Chad has seen the gamut of winemaking styles. This unique perspective manifests itself in wines are that are made naturally but nothing is left to chance.
