Donovan Rall is a true wizard when it comes to marrying different varieties, a winemaker who treats blending not just as a technique, but as the heartbeat of his entire project. He launched Rall Wines back in 2008 with a singular mission to capture the pure expression of the Swartland and Paardeberg regions. His approach is entirely hands-on, working meticulously with ancient, low yielding bush vines planted in granitic soils, including some parcels dating all the way back to 1969. Donovan leaves nothing to chance, thinning out fruit aggressively during the growing season to ensure maximum flavor concentration, and yet his work in the cellar is defined by sheer, non interventionist patience.\u003c\/p\u003e\n\u003cp\u003eThe secret to the incredible depth in these bottles lies in his philosophy and diverse choices for aging. He naturally ferments and matures his lots separately for up to ten months, utilizing a mix of massive 2,000 to 3,000 liter foudres, used small French oak barrels, concrete eggs, and clay amphorae. By letting each parcel find its voice in a different style of vessel before bringing them together with minimal filtration, his final products achieve a breathtaking harmony of texture, freshness, and character. The value packed into these regional blends is pretty staggering.
