The production is stubbornly traditional: 100% estate-grown blue agave, slow-cooked in stone ovens, crushed by a traditional tahona wheel (fewer than 1% of tequila distilleries still use this method), fermented with wild yeast in open wood vats, and double-distilled as close to bottle strength as possible. A natural spring on the distillery grounds supplies the production water.
