He also has parcels on all 3 geological soil types, and he has for years been using a small plot of 90 year old vines to replant diseased or dead vines using selection massale, so his plots are now all generally of a single clonal type. \u003c\/p\u003e\n\n\u003cp\u003eIn the cellar he’s gentle and hands off. He uses both steel tanks and barrels (mostly older ones, though when buying new he consults a biodynamic calendar to see when the wood was harvested).
