They take great care not to fall off their incredibly steep slopes, some rivaling the Bremmer Calmont in the Mosel. Planted in the pure limestone and marl, roots dig deep and even in the youngs vines the minerality is resplendent. Each plant is tended to by hand, coaxing the greatest quality from their miniscule yields. \u003c\/p\u003e\n\n\u003cp\u003eThe wines practically make themselves with a winemaking philosophy of “controlled idleness”. Spontaneously fermented in large old Slovenian oak, they are allowed to go through malolactic fermentation and don't see battonage.
