Needless to say, he chose the latter.\u003c\/p\u003e\n\n\u003cp\u003eGerhard is ultimately a student of wine, and drinks as much French wine, for instance, as Austrian. For a winemaker so interested in the traditions of others, experimentation comes naturally. In fact, he strives to “grow” wine rather than “make” it, predominantly in the vines but also with a careful hand in the cellar.\u003c\/p\u003e\n\n\u003cp\u003eHis farming is immaculate, and everything that can be done by hand is; picking, pruning, composting, and disgorging, all in pursuit of living wines. The wines are certainly alive, with clear and bright fruit, and tons of minerality, from the region’s limestone soils.
