No one makes more Aligoté cuvées than the de Moors, and this old-vine bottling makes the strongest case that Burgundy's supposed second-string white grape deserves to be taken seriously. The 2023 was hand-harvested, destemmed, gently pressed and fermented with native yeasts. It then spent two years on its lees with no bâtonnage or racking, first a year in 500-liter demi-muid and then a year in foudre. It was bottled unfiltered with only a small touch of sulfur, in keeping with the de Moors' hands-off style.
