Azul y Garanza farm it certified organic and treat the whole plot as a habitat, scrub and trees and insect life included, on the reasoning that in country this dry the vines need every ally they can get. The grapes are picked by hand and fermented with wild yeast in concrete, then the wine spends six months in amphora and another six in neutral 300-litre barrels, so nothing is added and nothing is covered up. Clay-limestone soils at 550 metres and cold desert nights keep the acidity intact.
