El3mento is his collaboration with the Portuguese winemaker Luís Candido da Silva, and it is the most uncompromising thing in the range: free-run juice only, no fining, no filtration, no new wood anywhere. The result is a red of real altitude — high-toned, floral, taut, more about lift and earth than about weight.
