Toni Sarrion built Mustiguillo around Bobal, a native grape long written off as bulk-wine filler, and this is the bottling that shows why he bothered: Bobal with Garnacha and Syrah, grown at around 800 metres on dolomitic limestone with a chalky, sandy texture that drains hard. The altitude and Bobal's own natural acidity give it a brightness you rarely meet in Mediterranean reds. Each plot and variety ferments separately, and the wine is aged about ten months in a mix of French oak casks and large tanks, so the fruit stays out front.
