The fruit comes from Finca Calvestra, a vineyard the estate planted at around 900 metres in the hills of Utiel, higher than anyone in the region had gone to grow vines, on chalky-sandy dolomitic limestone. Merseguera leads, with Viognier and Malvasia filling out the texture and adding a floral note; each variety is fermented separately with native yeast at cool temperatures in stainless steel, then held on its fine lees until bottling. What comes out is aromatic and mineral, with a saline snap that comes straight off the limestone.
