The Bordeaux Superieur is 72% Merlot and 28% Cabernet Sauvignon off clay-limestone, drawing on parcels that include Merlot planted more than a century ago, vinified plot by plot with three to five weeks on the skins in stainless steel. It then rests eight months with only a fifth of the blend in used French barrels, which keeps the wine about fruit and freshness rather than oak.
