Sauvignon Blanc leads the blend with Semillon and Muscadelle behind it; the fruit is picked early in the morning, pressed gently and fermented cool in stainless steel, then stirred weekly on its lees for texture. The result is crisp and saline rather than showy, the sort of white you buy by the case for oysters and weeknight fish.
