Vallée runs Château Yvonne in Parnay, a small Loire estate farmed organically since 1997 and biodynamically since 2012. The house makes its wines without additives and with almost no intervention, apart from a little sulfur at bottling. The fruit comes from very stony red clay laid down in the Eocene, sitting on a sandstone base. Quantities are small, and Vallée is patient with it: this cuvée is released only after years on its lees.
