What came out is 90% Cot (Malbec) with 10% Gamay at only 11% alcohol — light, perfumed, and about as far from a chewy, tannic Malbec as the grape gets. Clos du Tue-Boeuf sits at Les Montils, south of Blois, where Thierry and Jean-Marie Puzelat went organic in the 1990s and built one of the foundational estates of natural Loire wine, working with native yeasts and almost no added sulfur; Thierry's daughter Zoe has now joined them. There is very little of it.
