The old-school recipe works because the raw material suits it — Tempranillo grown between roughly 550 and 650 meters on south-facing clay soils studded with river pebbles keeps its acidity, and acidity is what carries a wine four decades. This bottle came to us from a private collection rather than from the bodega, and at forty years it sits in the sweet spot where dried red fruit, tobacco and sweet oak spice have fused into something seamless rather than merely old.
