Doing that meant cutting hard: this was made from roughly a quarter of the usual volume, drawn only from parcels that came in clean, principally Chardonnay from Chouilly with Pinot Noir from the early-ripening, south-facing slopes of Bouzy. Long years on the lees have given it the house's familiar creamy breadth, but this is a taut, reductive, gunflint-scented Dom Pérignon in which Chardonnay's chalky core does most of the talking.
