In his own words, most of the stony, poor soils he farms now are better suited to white wine. That makes this red Cabernet Franc his nod back to where he started. He founded Domaine du Collier and named it after Place du Collier, where the family home sits. He brought the family discipline with him: organic farming, everything picked by hand and native yeasts only. After that the wines go into barrel and are left alone, with no racking and no sulfur until bottling, often for more than two years. The Cabernet Franc ages in a cold, dry 17th-century cellar, kept apart from the older, damper one used for the Chenin. The whole domaine makes only about 1,250 cases a year, so bottles don't turn up often.
