One of Oudin's best sites is “Les Serres”, which has extremely shallow, almost non-existent top soil. Here 30-70 year old vines grow on the chiseled limestone. The Oudins have never used chemicals in the vineyard, but they are not certified organic because Nathalie Oudin refuses to use the required copper. In addition to the fruit from this special vineyard, the “Les Serres” also includes grapes from their two 1er Cru vineyards, Vaucopins and Vaugiraut, adding even more pedigree.

Domaine Oudin has long been one of our go-tos for traditional Chablis. The parents who founded the domaine have retired and their daughters have taken over, we were doubly thrilled to find out that the wines are as good as ever!

That shouldn't really be a surprise. The daughters have been involved for years and clearly learned how to do things right. And the domaine's terroir remains top-flight: the vines are in classic Kimmeridgian limestone soils with great exposures.

"The 2019 Chablis Les Serres comes from shallow soils with one-third massal selection and the remainder planted 40-45 years ago by Nathalie Oudin’s father. Matured only in stainless steel, it has a lively Granny Smith apple, pear and leesy bouquet that leaps from the glass. Despite the presence of gas in my samples, there is fine balance here. Fresh pear, Golden Delicious apple, and lemongrass notes develop toward the finish. Great potential." -Vinous
