Roulot left an acting career in Paris to take over in 1989 and has spent the decades since arguing for restraint: organic farming, gentle pressing, indigenous-yeast fermentation, new oak held to a modest share, and a hard cap of six bâtonnages, because stirring the lees builds richness at the cost of purity. The whites spend roughly a year on lees in barrel, then a further six months in stainless steel before bottling. 2023 was Burgundy's warmest season on record but with a relatively cool summer; a mid-July hailstorm passed through Meursault's top premier crus, Bouchères included, before warm, dry weather brought the crop back, and the whites came in with fine balance between fruit, acidity and alcohol.
