The domaine's parcel covers just 0.67 hectares, planted in the 1950s, when Guy Roulot replanted much of the estate, so these are genuinely old vines. Over the years this cuvée has become known as Roulot's saline, mouth-watering Meursault, the one you open at the start of a meal rather than the end. In the cellar it gets exactly the same treatment as the domaine's Premiers Crus. Jean-Marc Roulot is wary of lees stirring, which he thinks adds richness at the cost of purity.
