That pairing of ripeness and acidity is what lets a Cabernet go the distance. Moueix founded the estate in 1983 on the Napanook vineyard in Yountville. George Yount, the town's namesake, first planted vines there in 1838, and in the 1940s and '50s the site supplied fruit for some of Napa's finest wines. In 1987, winter rain came in at half the average, a very warm early summer gave way to a moderate late summer, and picking ran from September 4 to 17. The blend is 86% Cabernet Sauvignon, 9% Cabernet Franc and 5% Merlot, and only 25% of the barrels were new, a light hand with oak. It was released in October 1989, and nearly four decades on, this is a chance to taste where Dominus began.
