Edi Simcic sits in Goriska Brda, where the family works roughly twelve hectares scattered across the villages of Vipolze, Kozana and Fojana at 90 to 300 meters on ponca — the layered marl-and-sandstone flysch of an ancient seabed, the same soil that makes the best whites of Friuli. Edi himself came to the vineyards late, leaving another career at 54, and the estate is now run by his son Aleks with grandsons Jure and Jakob involved. They pass through each parcel three times per harvest, selecting berry by berry, and yields land somewhere around 700 grams of fruit per vine. The whites ferment and age in French oak barriques for the better part of a year, so this is Chardonnay in the old Burgundian mold rather than the crisp stainless style, though the current generation has been steadily dialing the oak back in favor of vibrancy.
