Chiles Mill sits on the red chert veined with green serpentine that gave Green \u0026amp; Red its name, mixed with Sobrante loam, organically farmed in Napa's cool Chiles Valley well east of the valley floor. The fruit is destemmed and hand-sorted into open-top fermenters, cold-soaked three days, fermented about ten days, then aged in a mix of American and French oak, only 20% of it new. 2018 gave Napa a long, even, unhurried growing season — ripeness without heat spikes — and at eight years on that shows: the tannins have settled and the fruit is still bright.
