Hatzidakis does, from ungrafted vines trained in the island's traditional koloura baskets, coiled into a nest on the ground so the fruit sits sheltered inside, out of the wind, drawing moisture from the sea fog that settles over the volcanic ash. The fruit comes from four villages — Pyrgos, Megalochori, Akrotiri and Emporio — and the settled juice ferments with indigenous yeasts at 16 to 18°C for a month, then rests six months on its fine lees and is bottled unfiltered. The estate was started in a cave on Santorini in 1997 by Haridimos Hatzidakis and Konstantina Chryssou; since Haridimos's death in 2017 their children Stella, Antonis and Ariadne have run it, and she drew the label for this wine at the age of three and a half.
