That long lees aging is what separates it from a straightforward Santorini — it builds texture and depth with no oak anywhere. The estate pieces its fruit together from small owned and rented parcels across the island, all farmed organically, which is how a small producer keeps its hands on old vines while Santorini is being sold to hotels.
