Cecilia is Zurab Topuridze's even blend of Rkatsiteli and Mtsvane, named for his granddaughter, grown at around 500 meters in eastern Georgia. It spends roughly seven months on the skins in qvevri and another four months before bottling, with next to nothing added — wild yeasts only, no fining, and at most a coarse filtration. If amber wine is new to you, start here: it is dry and grippy without being harsh, and it leans toward citrus and orchard fruit rather than the cidery, funky end of the category.
