The result is faintly cloudy, lightly sparkling, and pitched squarely at anyone who thinks they don't like sake. The brewery behind it, Ine to Agave, is a young operation in Oga City on Akita's coast in northern Japan, set up in a converted railway station building and named for the rice plant and the agave — two grains-and-plants traditions the founder wanted to see meet. Because the hops put it outside Japan's legal definition of sake, it's brewed under a separate licence as \"craft sake,\" which is less a loophole than a license to experiment.
