Jean-Baptiste Adam took over from his father, Jean-Marie, in 1996 and switched the vineyards to biodynamic farming. Every vine the estate owns or farms is now worked that way. The house picks everything by hand, ferments with the grapes' own yeasts, and keeps only the juice from the middle of the pressing, throwing out the first and last runs. Plenty of growers save that kind of care for their top bottles. Here it goes into an everyday Alsace white, which makes this one of the easier calls on the shelf.
