It comes from Kaefferkopf, the first site in Alsace to be legally delimited, back in 1932. The name already appears in the Abbey of Pairis's land records in 1338. The vines were planted between 1955 and 1970 on granite, silica, limestone and clay, on the hillsides just south of Ammerschwihr. The Adams have been making wine in that village since 1614. Jean-Baptiste moved the vineyards to biodynamic farming in 2003. The grapes are picked by hand, pressed as whole clusters, fermented on native yeasts in stainless steel tanks, so the site comes through without oak getting in the way.
